Greek Salad with Whole Wheat Orzo

This fresh, summery Greek salad can serve two as a meal and four as a appetizer.
1 cup 100% whole wheat orzo pasta
Dressing
1 Tablespoons extra-virgin olive oil
2 Tablespoons red wine vinegar
Juice of ½ lemon, about 2 Tablespoons
2 cloves of garlic
2 teaspoons of fresh oregano or 1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
Salad
1 head romaine lettuce
1 cucumber
1 slicer tomato
¼ cup Kalamata olives
Steps
Boil salted water for orzo pasta. While water comes to a boil, whisk together olive oil, vinegar, lemon juice, garlic, oregano, salt and pepper for salad dressing.
Cook pasta according to package directions. While pasta cooks, chop romaine, cucumber, and tomato.
Drain orzo and rinse in cold water. In a small bowl, mix orzo with ¼ of dressing. In a large bowl, toss vegetables with dressing. Top with orzo and olives.
