With whole wheat flour and antioxidant-rich sweeteners, this date bread is a perfect treat for Sunday brunch or a special occasion.

Ingredients

Vegetable oil spray

1 cup of dates

1 Tbsp flaxseed meal

1 1/2 cups hot water

1/2 half avocado

1 tsp vanilla extract

3 Tbsp maple syrup

1 1/2 cup whole wheat flour

1/2 cup all-purpose flour

1 tsp baking soda

1/2 tsp salt

3/4 cup date sugar

1 cup pecans

 

Heat the oven to 350 degrees.  Spray a loaf pan lightly with oil.

Chop the dates into small pieces and place in a medium bowl with the flaxseed meal.  Pour the hot water over the mixture and let soak for five minutes.  Mash the avocado.  After five minutes, whisk the avocado, vanilla, and maple syrup into the date mixture.

Chop the pecans in small pieces.  Sift the flours, baking powder, salt, and date sugar into a large bowl.  Fold the date mixture and the pecans into the flour mixture, until just mixed.  Pour batter into the prepared loaf pan.

Bake 65 to 70 minutes or until a skewer inserted in the center of the loaf comes out clean.  Turn the pan once during cooking.  Cool in the pan for 20 minutes and then remove to a wire rack.  When completely cool, enjoy or store wrapped in parchment paper for up to four days.
