Cowboy caviar was a big crowd pleaser at parties and bar-b-ques long before I went to a plant-based diet. Using only one bowl and taking only 15 minutes, you can make any night festive!
Ingredients
3 cloves garlic
1 T olive oil
¼ cup red wine vinegar
2 tsp cumin
Salt and pepper, to taste
1 cup frozen corn
1 can black-eyed peas, drained and rinsed
1 avocado
1 tomato
2 green onions, about ½ cup
Fresh cilantro
Press garlic into a small bowl. Wisk in olive oil, vinegar, and cumin. Add salt and pepper to taste. Chop tomato, avocado, and green onion, both green and white parts. Mic chopped vegetables, black-eyed peas, and corn into the dressing. Garnish with cilantro. Serve with tortilla chips.
