The flambé of bananas foster at a restaurant always has a huge appeal for entertainment value.  The caramelized bananas have a huge appeal to the taste buds.  Add whole grain pancakes and you can have a breakfast to make yourself proud.  If you do the pre-step ahead of time, these pancakes can be on the table in 20 minutes.

Ingredients

2 bananas (one overly ripe)

1.5 Tablespoons of maple syrup

2 teaspoons of date sugar

1 Tablespoon flax meal

1 cup of soy milk (or other plant milk)

1 Tablespoons vegetable oil, plus more for pan

1 cup of whole wheat flour

2 ½ teaspoons of baking powder

¼ teaspoon of salt

¼ cup walnuts pieces

  1. Peel and freeze the overripe banana.  Use a food processor to make the banana into “nice cream” soft-serve texture.  Use a small scoop or two spoons to form three or four scoops.  Put in the freezer until ready to use.
  2. Wisk the flax meal into the soy milk and set aside for five minutes. 
  3. Cut the banana on the bias to create oval slices.
  4. Wisk the oil into the milk.  Combine the flour, baking powder, and salt.  Mix well and add to the batter. 
  5. Break the walnuts into pea-size pieces
  6. In a small saucepan, whisk the date sugar into the syrup.  (The date sugar creates the stickiness to adhere the bananas to the pancakes.)
  7. Add the sliced bananas to the small saucepan. Over low heat, cook flipping the bananas one time and stirring constantly until caramelization begins.  (The smell and caramel color indicate caramelization.)
  8. Heat another skillet.  Cast iron works best.
  9. Add a small amount of vegetable oil to the skillet.
  10. Ladle about two tablespoons of batter into the pan for each pancake.  You may need to use a spoon to spread the batter slightly. Gently place two or three banana slices and a few walnut pieces in each pancake.  Cook for about two minutes.
  11. Turn pancakes when the edges look dry and bubbles are bursting on top near the center.  Cook briefly on the bananas-up side.
  12. Top stacks of pancakes with a scoop of banana nice cream.
