Irish Colcannon

This traditional Irish potato dish makes a fun St. Patty’s Day option with the green kale.
3 cups kale
4 potatoes
1 cup white mushrooms
1 T tomato paste
1 t smoked paprika
1 cup vegetable broth
2 cloves garlic
1 T soy sauce
Green onion
Fresh parsley
Salt
Pepper
Rip kale of the stems into bite size pieces. Cover potatoes with water and boil 30-40 minutes until tender.
Chop mushrooms and mince garlic. In a large skillet, mix tomato paste and paprika. Cook 30 seconds and add 1/2 cup veg broth. Add garlic and cook 1 minute. Add mushrooms and cook down about 10 minutes. Let cool partially. Use immersion or pitcher blender to blend the mushroom mixture to a sauce. Stir in the soy sauce.
Reheat skillet and add 1/4 cup broth. Cook kale for 3 minutes and then add sauce.
Drain potatoes and smash gently. Stir into kale. Add 1/4 cup broth if needed. Use plenty of black pepper. Salt to taste. Garnish with parsley and green onion.
